Thanks for that - I've got a swag of American hops in the freezer and haven't done a yank for ages (girl from Milwaukee but that was 45 years ago).
I'm going to have a go at the Ballast Point American IPA on the site, and I have translated it from Klingon to Australian with a few subs in the grains. Also I have some Mosaic but not that much so will need to sub for that as well. I've got a neglected pack of San Diego super in the fridge as well, so it should all come together. The fermentation temp is interesting, it definitely translates to 20 to 23 degrees.
Another tricky thing is the 6.4 gallons (nearly 25 litres) Kettle "target". I guess this means before boil, so assuming 10% boil off this would translate to a more sensible 22.2 litres into fermenter which sounds about right. As usual I'll just boil till I hit the right gravity according to my refractometer and hope the hops don't mind that too much.
Ballast Point American IPA
7% ABV 57 IBU
4.5 kg Barrett Burston Pale 450g Munich 2 450g Barrett Buston Wheat Malt
350g Weyermann Vienna
Single Infusion mash 65.5 degrees.
60 min; 35g Magnum 30 min: 7g Magnum 15 min 14g Magnum
That actually turned out to be one of my best beers of Trumpland style, although I got pretty rat arsed on a few pints. Will do it again but this time I'll use another hop as the brew took the rest of my Mosaic. Having moved house and setting up new brewery I'm not doing slow fermenting lagers for a while and will build stocks up with some quick fermenting ales.

happy: I was given a co2 and nitrogen mix bottle and I'm trying to find any info on psi and time to properly carbonate with this mix. Any clues please? Thanks Happy
